Banana Crumb Muffins

I do love the internet at my fingertips for finding recipes. Occasionally I'll even try a new one! Alyx is working at Circle K and they sometimes have oodles of bananas they need to get rid of. Banana mashing was going on here big time!

This recipe was a new one for me and is certain to delight!



Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Preheat oven to 375 degrees F. Lightly grease 10 muffin cups, or line with muffin papers.

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another owl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

*** My additional tidbit of advice:
Change clothing into loose fitting britches before beginning the eating. They are divine.

ooooh! they sure do look heavenly! the question is: would they actually rise? or... at 7,000 feet, would they sink? HATE high elevation baking!

Cole is sitting by me, and when this picture came up he made a slurping sound and said, 'We should make those! Cuz there's a recipe ...' Then started reading off the 'ones' and 'twos' he saw on the recipe. If we had bananas, we'd sure make some right now! Uuumm ... good thing we can't, because ... my dryer is still not drying properly! :-) Love reading your blog!
